Here’s a great healthy treat that you’ll love to stuff into your child’s lunchbox for school… and they’ll love finding it! These chocolate chip cookies are made with whole grains and lightly sweetened with honey for a delicious, decadent-tasting treat that is actually quite healthy. Replace some of the chocolate chips with dried cranberries, raisins, or nuts for an even healthier snack!
- 1 1/2 cups freshly ground white whole wheat flour
- 1 t. cinnamon
- 1/2 t. salt
- 1/2 t. baking soda
- 1 egg, beaten
- 1/2 cup each, melted butter and palm shortening
- 1/2 cup honey
- 3 cups oats
- 1 cup chocolate chips
- In a large bowl, whisk together the flour, cinnamon, salt and baking soda.
- In a large glass measuring cup, mix together the egg, melted shortening and butter, and honey until well blended.
- Stir the liquid ingredients into the dry ingredients. Stir in the oats and chocolate chips.
- Drop dough by tablespoon onto a cookie sheet (I like to use my cast iron pizza pan or a baking stone), and bake at 350F for 10-15 minutes. Cool completely on wire rack.
